SHOWCOOKING by the Spanish chef JORDI CRUZ (English version)

Our blog “Entre ollas anda el fuego” had the great honour of having been selected among others to attend the showcooking made by Jordi Cruz, the youngest chef in Spain to get a Michelin star.

The event took place on Monday, April 26th in “Simply Fabulous”, and as the name of these premises suggests, the show was fabulous indeed. Nowadays, Jordi Cruz leads an advertising campaign made by the food brand Knorr to promote a new product: the stock reduction. This stock is being introduced by well-known chefs in different countries throughout the world. Jordi Cruz showed us how to use this product as the basic stock for excellent dishes through plain and simple explanations, and solving any doubt we could have.

But, obviously, the goal of this stock reduction is not only to be used by master chefs for high level cookery, but also by housewives in the daily cooking, since they have been made up, mainly, to be helpful in our everyday life. It consists of natural products boiled and reduced all together to produce a stock with a gelatinous consistency which makes it suitable to be added to any cream, purée, stew, sauce, roast, etc. You can choose among its three different versions: chicken, vegetables and meat. According to the latter, we think that it may be a good substitute for the famous (and so time-consuming!) Julia Child’s brown stock, because of its concentrated smell and taste, and I suppose this possibility will be highly appreciated by many people, including very especially the hard-working and self-sacrificing E.G.  


 However, apart from his fantastic culinary art, Jordi delighted us with interesting anecdotes, procedures and tricks, mere samples of his huge culture in gastronomy. Moreover, I was pleasantly surprised by his thorough knowledge of Chemistry. On the other hand, Jordi’s close and open temper, together with his innate skills as a good communicator, developed a very relaxed and pleasant atmosphere.

SHOWCOOKING con JORDI CRUZ

Entre ollas anda el fuego ha tenido el honor de ser uno de los blogs seleccionados para asistir al Showcooking celebrado ayer en Madrid a cargo de Jordi Cruz, el chef español más joven en obtener la estrella Michelín.

El acto tuvo lugar en “Simply Fabulous” en la zona de Alonso Martínez y, realmente, el evento hizo honor al nombre del local, puesto que fue fabuloso. Jordi Cruz es actualmente imagen del cacito de caldo Knorr, al igual que otros muchos chefs en diferentes países de todo el mundo. A través de explicaciones claras y sencillas, y despejando cualquier duda que a los asistentes nos pudiera surgir, Jordi nos demostró la manera de utilizar estos cacitos de caldo como base para elaborar platos de alta gastronomía.

Pero por supuesto, estos cacitos no se limitan a la alta gastronomía, sino que se han diseñado para ser, fundamentalmente, un producto muy útil para servirnos de ayuda en la cocina y la vida cotidiana. Se trata de cacitos de caldo concentrado a base de productos naturales y su consistencia gelatinosa hace que sean muy versátiles para incorporar a cualquier crema, guiso, salsa, asado, etc., pudiendo elegir entre sus tres variedades: pollo, verduras y carne. Precisamente este último, dado su olor y sabor concentrado, pienso que podría ser un sustituto del famoso (y latoso) caldo oscuro de nuestra Julia Child, cosa que supongo que muchos agradecerán, incluyendo muy especialmente a la sufrida y abnegada E.G.



Pero Jordi no sólo nos deleitó con su arte culinario, sino que también nos contó anécdotas, procedimientos y trucos, simples ejemplos de su enorme cultura gastronómica. Me sorprendieron, además, sus altos conocimientos de química. Por otra parte, el estilo cercano de Jordi, unido a sus dotes innatas de comunicador, hicieron que se creara un ambiente muy relajado y agradable.

En definitiva, una jornada gastronómica llena de encanto e interés, y desde aquí me gustaría agradecer muy profundamente tanto a Jordi Cruz como a los responsables de Knorr por habernos hecho partícipes de una experiencia tan gratificante, así como por el buen trato recibido.
