Today I want to let you know this recipe, excellent as a starter or as a snack.

HAM AND CHEESE FRITTERS - PIGNATELLI STYLE
Ingredients:
- 125 grs / 4.35 ounces of flour
- 60 grs / 2.10 ounces of butter
- 3 eggs
- ¼ litre / 0.43 UK pint / 0.52 USA pint of water
- Salt
- Pepper
- 60 grs/2.10 ounces of diced cured ham
- 75 grs/2.60 ounces of grated cheese
- Olive oil
Instructions:
Put the water and the butter together in a saucepan over the heat. When it starts boiling, set it aside and pour the flour all at once and beat.
Place the saucepan over the heat again for about 5 minutes stirring with a wooden spoon without stop. Put it away from the heat again and add the ham, the cheese, some salt and pepper and put it over the heat once more for another 5 minutes.
Off the heat, let it get warm, and then add the eggs one by one. Don’t add the next egg until the previous one is completely mixed into the dough.
Let the dough stand for a while and get a big pan ready with plentiful oiive oil to fry the fritters, not too hot to let them cook completely inside. To make each fritter, take a little amount of dough with a spoon and push it with your finger into the hot olive oil and wait until it is lightly brown on both sides and …..ENJOY YOUR MEAL!!!!
